The first ones that popped into my mind were quickly grabbed up.

Truthfully, I'm not either. I see live performances with the lead singer playing a tambourine, maybe that's the sound I was thinking of.
 
Hugh Masekela's Grazing In The Grass spent two weeks at number one on the Hot 100 in July 1968. Chuck Carter played drums and cowbell on the song – but not at the same time.

 
The Ozark Mountain Daredevils, best known for their 1975 #3 hit Jackie Blue, released the digital single More Cowbell in June 2023. Ron Gremp played drums and cowbell on the song – but not at the same time.

I think the point of this thread - like most threads on DRC - is to post songs that members personally think of. If someone wants to look at the list and select songs that have meaning to them (and that they want to share), that's their choice.
 
OK, so it's not technically a cowbell; but it sounds like it.

"Goodbye Girl" features a percussive track arranged by drummer Gilson Lavis . "Gilson constructed a washing line of bottles and bits of metal and tin and played them instead of a drum kit. It was a very inventive thing to do, slightly surreal, but it worked a treat."
