This morning, I was able to access my paystub and finally saw it. It will be direct deposited, well at least for my 3rd check and the 2nd is supposedly lost in the mail?

But I will try and make them cancel that lost check and either have it direct deposit tomorrow or send it overnight. I'm not playing there games anymore!

This morning, my temp agency refused to cancel the lost check. They would canceled if I don't receive it by Monday.

Well, when I got home from work today. I checked my mailbox and what you know my damn check finally arrived! I felt like Steve Martin in The Jerk, but without saying "The new phonebooks is here."

For years, I use to enjoy certain sauces and desserts. Like my mom, use to make some great spaghetti sauce for years until it started to taste watered down. Those store bought sauces, hardly taste great as the restaurant quality. Plus I'm partially picky on my foods, like I can't stand chunky tomatoes and onions in my sauces. So I hardly buy Ragu, Prego, etc anymore. So most likely, my taste spuds has changed through out the years and I have basically stop buying store brands and I enjoy the restaurants quality stuff. But after a while, eating out can get pricey and I miss the old home quality stuff.

I been wanting to work on my own recipes, for the past several months, I been playing with the some different stuff and of coarse researching stuff online and watching plenty of food network.

Not long ago, I had some friends and family over to try some stuff out and I wanted to know, which they were honest on how the taste and quality was and they told me they absolutely love it and said it taste better then restaurant quality. They want my recipes and I joked, it’s a secret and I didn’t want to hand it out. But I did and for some reason, when they try and make it. It wasn’t the same quality as mine and it still the same ingredients. But either way, the past couple of months I'm proud for trying and finally perfected my own spaghetti, marianna, alfredo sauce and hamburger seasoning. I’m still working on my salsa, it way to spicy for me and some people.

Now I have been working on some desserts. Couple of weeks ago, I made a key lime pie and it tasted so rich and good. Today, I tried making a lemon meringue pie, when it was finished and cooling. The lemon meringue was like soup. I traced my steps back, to figured out what I did wrong. I realize when I added the eggs, butter and lemon juice. I was suppose to turn off the heat and let everything melt in the pot, while whisking. I made the mistake, by leaving the heat on and letting the lemon acid, destroying the cornstarch. But the lemon did tasted great. So I’ll try that again soon, my next project is work on a Boston Cream Pie.

Have some of you here, at least try making or own home made recipes. I have some old family recipes, but to me they don't taste as good as they were in the past. That why I been tweaking the recipes, to make them taste better or at least for me now.

I'm always cooking something new. My strategy is to find the best world-class recipes I can for a particular dish, and tweak them to fit my tastes. I like big, bold flavors. I've been cooking plenty enough to rescue any bland recipe and know what to add to make it awesome.

Generally speaking, I much rather cook food than make dessert. Dessert has a way of sometimes not always working... My experience with making a lemon meringue pie was similar to yours. I was disappointed with the results, although it tasted really good. I did make Tiramisu from scratch a few weeks ago, and that came out great, so I was very pleased.

Keep at it man!

I do a lot of stuff without recipes. Some things I'll use one more as a general guideline, and wing the details. Dishes are never exactly the same, but that's Bart of the fun.

Meringue is a bit intimidating.

Cooking can be fun. I rarely try anything more advanced than steaks on the grill or ribs. I would have no idea where to start with a key lime pie.

Unfortunately I'm not much of a steak person, I don't like chewy meat. Ribs can be good, if cooked properly.

Oh key lime pie is easy to make, just contains condensed milk, egg yolks, key lime juice, key lime zest. Mix all in a blender and bake in an oven at 350 degrees for 10 minutes and let it cool.

That sounds pretty awesome, right now my major food categories I can cook are Italian, hamburger and the basic food items hot dogs, mac & cheese and grilled cheese.

I'm the opposite, I rather make desserts then cook for now. I basically love to make anything with chocolate. Tiramisu does look good, but unfortunately I can't stand the taste of coffee. It can be submitted for chocolate or caramel. But I don't know if it still state the same?

I see your point, specially when you have to make everything by yourself and nobody can help you with the million of dishes.

I been having no trouble making meringue right now. I simply use egg whites, vanilla, cream of tarter and a few tbs of sugar.

Today, I took another stab at making lemon meringue pie. It came out a lot better, it didn't look like soup. Since I didn't expose it to much heat this time. But when I cut it up and ready to serve, the lemon started to run. It like the air or something made it a bit running? I didn't place it in the fridge, I wanted to keep it firm by placing it in the freezer. Maybe that could been the issue?

Oh well, at least I'm still trying and one day it will come out perfect. I did took a quick pic of what the pie looked like, before the lemon started to run.
